How do you choose an outsource contractor?

Hey everyone, I need some advice. I'm looking for a reliable outsourcing company for one of our internal projects, which requires some complex tech (ML, NLP, data virtualization, etc.)

I'm not asking for a specific vendor - there are plenty of them offering pretty much the same. Right now, I want to figure out for myself how to choose correctly. What to look at except for the rather obvious things? I would appreciate any personal experience and recommendations.
