Hi,
I am a game developer and game designer. In my field, all projects are long-term or on-going type. so, If I take more than 1 project at a time and divide my time for those. like If I spend the first 5 hours on my first onGoing job and spend the other 5 hours of my day on other job.
So, does Upwork App allows switching the project. Can I do both jobs and calculate the hours for those jobs separately.

Yes, the App tracks time separately on each contract.
Overriding means adding the same manual time for two different contracts, but the App can't allow that.

Yes, you can. But you keep in mind not to override the time you work on the two projects.

I didn't know that it's possible to override until the client allows offline time addition.
Won't the app keep the time record separate on its own?
I am confused about overriding the time. can you explain?
