I'm new on here - where are the client names listed? I've made two proposals so far and only after I've sent a proposal was I able to locate the name of the client. It would help to have this up-front so I don't have to start my cover letter with "Dear Sir or Madam."

Forget using "dear" anything ... a simple "hello" or nothing at all will suffice.
Clients remain anonymous until bids are submitted and depending on how they set up their account, you may or may not be able to glean any more info from their name.

Personalize the proposal to the job rather than to the person advertising the job (they might not even be the end client). The editing jobs receive a hailstorm of proposals and so if you have an editing and writing niche I'd work that angle.
Starting with a formal greeting as if this were a cover letter is a mistake. When clients see your proposal preview, the see only the first couple of lines before deciding whether or not to open your proposal. Don't waste that space.
I like to use the name if it's there, but if not, then a simple, hi, hello, howdy or ahoy there should do the job.
