Hello, I'm an English Proofreader, and I just got scammed after editing part of a document for a client. Just being curious, can I add the edited document to my portfolio since I actually worked on it?

No, you can't, because you hold no rights to it and it would violate the author's rights to do so. Obviously you can't only put the edits into a portfolio.
