Hello, I'm currently looking to verify my profession experience by having some paperwork that I may need later for applying to foreign full-time jobs or something similar. Wondering if Upwork could provide all the contracts I had completed on the platform in a formal format (eg. client name, job description, budget) that it's presentable documents that proves I worked for an x amount of time? Thanks.

You can do this manually by using the tool: Lifetime Billings by Client.
For a more formal letter from Upwork, you could use the Earnings Certificate. It shows how long you have been working on Upwork and how much you have earned.
Unfortunately, I don't think Upwork will create something that you are after as there won't be much demand for it. Your Upwork profile link should be useful for future employers too. Pop that on your resume.

I'm talking about a legal document. Like applying for a working permit in
Germany, would require a proof of experience of at least 1 year to be
considered eligible. I dont think they would care to look at my Upwork
profile 🙂
They want proof that you are able to earn enough money to sustain yourself. Right now you are not. You can use your "Certificate of Earnings" but you probably need it translated by an authorized translater.
