How Should My Client Set Up Our Contract?

Hi, 

I got a client outside of Upwork. Where I'll be working on an hourly contract with this client. So I want this hourly contract set up on Upwork, but I don't know how I and the client are going to do it. Any piece of advice, please.?

If you found a person outside of upwork, why do you want to go through the platform and pay 20% fee when you could just as well get 100%?
