I've informed my client that i will no longer be able to do a specific project on a funded milestone.
My client has agreed to assign the work to someone else and asked me to refund the fixed milestone.
How do I refund a funded the money in the escrow or can the client just delete a milestone to get the money back? I'm not sure how this goes.

you can just end the contract, which will automatically send the funds back to the client's payment method.
Alternatively the client can end the contract and request the return of the funds in the process, which you will then have to approve (one extra step.)
In general it is worth not letting situations like that happen if at all possible, as it creates "unsuccessful contract outcomes."
