I'm about to hire a freelances for re-doing my wordpress website.  I don't know how much access they need to do their job.  And how do I know if anything has been embeeded that should not be there.  This is my first time using a freelancer. Are the reviews the only thing I have to go on, to judge their honestly.

You may need to give the freelancer complete access to your Wordpress website if you want him to do his job.

But if you don't want to do that, you don't need to give him any access at all.

You can export your Wordpress website to a transportable file or set of file and hire a freelancer who is able to mount the site on their own development server. The freelancer can do the work on her development server and let you see the change, and then provide you with the files. Or she can provide your technical team access to the changed files.
