Iga how to do it in Poland? What documents should I fill? ....Literally, I even have to clue what to ask about. Simply how to feed the tax pig.

Please take a look at this help article about reporting your income from Upwork which explains how to access the information about your earnings on Upwork. With regard to what documents you will need to supply in Poland when filing taxes, please seek the advice of a tax specialist for advice specific to your country, as we won't be able to advise on that.

Polish tax law is tricky and you need someone experienced to help you with taxes. They asked me to pay taxes twice, despite US-Poland treaty on avoiding double taxation. They were unable to explain why I am required to pay twice. I filed official complaint and now after years the case is closed without reply and my money long gone to the infamous institution we all hate in PL. So BEWARE. UW will not help us because they don't advise on foreign tax law, obviously, and they stated it multiple times. Find tax advisor and bombard tax institution with questions and requests for assistance, though this is only to point out there is a problem because they have no idea how to do taxes other than earnings in PL reported in PLN. Next year when my income from Upwork - if there will be any because the place is dead - will be reported to Polish tax office by UW, I am sure their computers explode because they have no idea what to do with foreign income reported not in PLN and they will charge you double tax just to charge anything, rather than obeying international treaties.
