I'm working on a project divide in 3 milestones.
I've made the first one and start the seconde one but Before I ask the client to put the 25th of january for the end of the seconde milestone.
The Client want to close the contract and build a new one, is that secure?
Also I haven't recieve the money from the first milestone..
Could you tell me what is the best option for me?

So one of a couple of things happened. You're saying that your client sent up milestones. Did you submit via the milestone button that you can find under your "My Jobs" tab in Upwork? If you submitted it to the client via Messages, you need to submit it under the milestone you did the work for.
The above doesn't matter though if you submitted work for an unfunded milestone. Upwork offers protection for FUNDED milestones, and you should never submit work for an unfunded milestone.
You can't really stop a client from closing a contract and starting a new one.
You can click on 'Overview' under your 'Reports' tab to check the status of funds that you expect to have been paid for you, and it will tell you if your money is in a review period, pending, or available for you to withdraw.
The deadline for a Fixed-price job is there as a guideline so as long as you and the client communicate about when they expect the work to be completed, there really isn't a need to create a new contract because of a change in deadline.
If the client does want to proceed with a new contract, you should have the new contract in place and funded before you working on the 2nd milestone.
