Upwork surveyed many freelancers (and possibly clients, too) over a period of several months before changing fees.
If you are working with clients to whom the 2.75% payment processing fee is significant enough to inspire them to leave the platform, you may want to assess their professionalism and financial security.
If you move projects outside of Upwork and have not been working with those clients for more than 2 years, you will be violating your agreement with Upwork. Not only will your account be suspended or terminated, but you and/or the client could be on the hook for the agreed $2500 buyout fee. A client who doesn't want to pay a few bucks for payment processing probably really doesn't want to pay $2500 to buy you out of your contract.
