I noticed that my gmail address is forced to login through my google account when signing into the platform.
I never use my google account for logging into websites, along with facebook, for privacy reasons. I don't want any other company to gather my Upwork activity. Why am I formced to breach my privacy?
If logging in with a gmail address is will always force a google account connection, can I change my email address for the platform? I would rather create a separate email account at some random provider, than give away my privacy to Google.

I don't believe Upwork requires this.
I don't use Google login.

When I choose to login through my email, I write down my email, and it redirects me toward the Google Account login. There is no way to login for me without it.

I have never tried to use a Google-affiliated email address with Upwork.
Why don't you just move forward with your stated plan: Use a non-Google email address?

Please know this is an optional feature, you can disable it by going to Settings > Connected Services.
