As for taking credit in someone else's work, it goes both ways. Should the e-book be a big flop, the ghost writer wouldn't care less. If the "author" of the ghost written e-book should go downhill, at least the ghost writer can still sleep at night.

Ghostwriting is reasonable when the pay and parameters are reasonable. If the client has a valuable framework or seed that the freelancer couldn't come up with on their own, then great.  If the client wants to pay a fair price for creative work and/or sentence-by-sentence writing, also great. If a client asks for an "action chase mystery story" or a re-write of their Gone With The Wind adaptation ("I read this book and think it has serious Oscar potential!!!!") at a rate of $15.00 and a smile ("Should take an expert maybe 30 minutes tops!"), then client is silly. Patrick chuckles.
