chat says I deleted my own message

My question is how does the scammer make my chat say that I deleted my text?

Chat says I deleted my message. Then I went on the site and it says my proposal was declined. It was actually an invitation to send a proposal that had a phone number to call. I'm guessing it was another scam...

Upwork has lots of automated messages that don't quite hit the mark. For example, when money is rescinded due to a client chargeback, you may get a message saying you "refunded" the client. 

In your situation, I would guess that someone (or multiple someones) reported the client and the job and all the messages associated with it were removed from the platform.
