I'd like to share my experience when I was just starting as a freelancer for Upwork. I think it is important to build your reputation as a credible freelancer. You can do this by being honest with the information you put on your profile. Build your profile with your credentials, certifications and take on additional skills test adding value to you. Employers tend to hire freelancers that can give them more and have experience.
And for your Payments concern. Clients have the option to pay for your work hourly or for a Fixed price. you can refer to this link to know the difference between the two.

You can also read more about the Payment options and which one would be suitable for you. This would also show you how to set up your Payment method.

Getting paid on PayPal will get your profile suspended, at the very least. All payments must be through Upwork.
