In my original job post I chose the fixed price option but I'd like to change that to an hourly fee. The edit option only lets me edit the value of the job.

Hi Marcella,

It is not possible to convert a contract from hourly to fixed-price (or vice versa) after hiring. If you would like to change the contract type, you will need to end the contract and rehire the freelancer once the offer terms are changed to an hourly contract.
