My request to only have the last letter of my name on my profile was rejected, yet I see many profiles in that format. What gives? Why can some be listed that way but I can't?

You are misunderstanding something.

ALL freelancers have to put their real, full surname on their account, but EVERYONE'S name is DISPLAYED on their profile as "first name first initial"

So when you look at my profile you see only Petra R, but my full name Petra R******* is on my account and once a client accepts my proposals or hires me, they can see my full name in the contract and messages.

But the public profile always shows just the first name and the initial of the surname.

In order to comply with Upwork Terms of Service, you will need to use only truthful and real information about yourself including your name and your profile picture. Are you referring to how names of freelancers on searches appear?
