Safeguarding Against Financial Fraud

I'm hiring a bookkeeper in Upworks and am wondering how to protect myself againts fraud.  I'm not giving out sensitive stuff like Bank Account, Credit Card or Social Insurance Numbers, but I'd still like to know what protection steps I can take.
