I just recently started using upwork and I got selected for an interview. But when we started chatting they wanted to do everything through email and they have yet to officially select me for the job. It feels like a bad idea to send the work to them before they officially select me. Is this normal to complete jobs outside of the upwork website? Should I wait to send the work to them?

NEVER, NEVER do any work until the job is funded/ payment is verified/ and the job shows in your "My Jobs" tab.  You will never get paid otherwise.

No, Never. It's a Scam Job. At least they have to fund 1 milestone for you.
