I'm new to this community and still getting the hang of it.
I've been recently contacted by this so-called agency. I was sent this mail:

But, it's just weird to me that I was not asked to hand out a sample or anything at all.
As said before, I'm getting acquainted with all these formalities and I'm not sure if I should "trust" any agency and send out my information as it is.
How can I recognize legitimate agencies and what is the protocol to be followed when getting hired by an agency.

Aurora, I haven't had the chance to read the e-mail before it was edited but generally speaking, outside of Upwork while working with an agency for the first time it is a good idea to ask for an advance of 50%.
There is another option, you can provide them with the link to your Upwork profile and ask them to hire you through Upwork. This way, if they accept, you will benefit of the payment protection in place on Upwork, in exchange of a 20% or 10% fee.
Aurora, ask CS to check this out for you. There are sometimes genuine Upwork recruiters whose emails seem really scammy, and seem not to have anything to do with Upwork.
If the OP's question concerns one of UW's recruiters, then it is high time Upwork monitored wording and email access.
Just thought I'd mention it (as you know, none of us have insider knowledge), because I have certainly missed out on a couple of jobs that were suggested by Upwork recruiters , which I have dismissed out of hand thinking they were scams.
I don't think you can blame me for suggesting the OP covers her bases. And I only suggested she should ask customer support.

This so-called agency is Power Translation supposedly based in Israel.
Anyway, I just disregarded it as I have a bad feeling about it.
