How to handle infrequent tasks

I need to hire someone to occasionally update information in a couple of different WordPress sites. The requests come in pretty infrequently, some months there is nothing while other months there will be 3-5 different tasks. I want someone in an ongoing relationship to handle them as they come in.

What is the best way to setup a project or relationship for someone for this situation?

Also, I'm struggling how to categorize those tasks... virtual admin? data entry? content? but definitely not WordPress development.

I recommend virtual assistant as a category.

But I think the job description is more important than the category.

Stacy, I have no idea how to answer your second question, but I can tell you that I work with many clients that have what you call infrequent tasks. As a freelancer, in my opinion, the most important is to have deadlines that are flexible enough to allow space to fit your job somewhere between other jobs and other obligations.
