Paycheck Invoice

I've been using up work for around 6 months as my main job working for one company. I am still a little confused on the payment invoices that would basically show the pay you earned for each week. I have to report my income every month to social security and it gets kind of confusing because when I download my pay stubs the date is always different from the week or month that I'm in. What is the best way to determine which pay stubs to use to report this? Example: I need to report December's income. Are the dates on the invoice the day that I received my payment or the last day of the work week which would fall on a Sunday?
