I'm new to upwork, the first two messages from clients with interview invites both had skype links to open to schedule an interview. There is no "accept interview" button on the upwork platform. Is this proper protocol? Is this a scam?

An interview happens when a client either invites you to apply for their job posting or when you apply for a job posting and the client replies to your submitted proposal. When a client invites you to their job post there will be a 'submit proposal' button but when a clent responds to your submitted proposal - its automatic and it becomes a message.
As for protocal - all communication is to be through Upwork until a client give you a contract on Upwork and you accept that contract on Upwork. During the interview stage, communication is via the messages tab (that includes the integrated zoom feature in the messages tab).
